A few hundred metres from Chùa Hà elevated-rail station in Hanoi, students and office workers queue each morning at a bánh mì shop on Trương Công Giai Street. The report says it serves hundreds of customers and the line reaches into the street. Open from early morning until about 1 or 2 p.m., it is a simple takeaway operation with no seating. Char siu prepared with the shop’s own sauce is the signature filling, combined with egg, pâté or sausage. Prices run from 10,000 dong for egg to 35,000 for a fully loaded sandwich. Several older women work quickly, keeping waits relatively short despite the crowd. Near rail, schools and offices, the queue is not a tourist spectacle; it is also a production line assembling breakfast within the timetable of commuting.
